Seafood Linguine


I love seafood so this is one of my favourite dishes

Seafood Linguine



Serves 4

400g Linguine

500g Mussels

250g Prawns

30g Butter

2 tablespoons Olive Oil

2-3 garlic gloves crushed

1/2 red chilli finely chopped

100 mls White wine

1 can chopped tomatoes

Handful of Parsley roughly chopped


Cook the Linguine in a large pan of lightly salted water according to the pack instructions or 8 mins if you like it ‘al dente’

Heat the butter and olive oil in a large pan

Add in the garlic and chilli gently heat for a minute or two do not let the garlic burn

Turn up the heat add the mussels,wine and canned tomatoes

Put the lid on and cook until all the mussels have opened (any mussels that do not open you need to discard these ones)

Add the prawns and half of the parsley season with salt and pepper to taste

Give everything a good stir and cook for a further 4-5 mins

Drain the Linguine keep about a 1/4 cup of the water from the pasta aside and add along with the drained Linguine to the seafood stir well garnish with the rest of the Parsley and serve immediately

Serve in bowls with lemon wedges
