Granola can be very expensive to buy but as it is basically toasted oats it is very easy and cheap to make at home. Making your own means there are no additives and you can add your own choice of fruit and nuts. This recipe is easy to tweak so feel free to experiment with different quantities/flavours.
2 cups Rolled Oats/Oat Flakes
2 tablespoons light brown sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon vanilla powder
1/4 teaspoon salt
1/3 cup vegetable oil
1/4 cup honey
Pre heat the oven too 150c/300f
Add all the dry ingredients together in a bowl stir well
Add in the honey and oil and mix well ensure the oats are well coated
Spread the mixture out in a thin even layer on a baking tray and place in the oven for 15 mins.
After the 15 mins is up take it out of the oven and stir the mixture well, place back into the oven for 10-15 mins more until the mixture is golden brown.
Place the baking tray on a wire rack and cool the granola to room temperature, stirring occasionally, about 20 minutes. ( It will harden as it cools.)
Add some chopped nuts and mixed fruit and mix well this will store well in an airtight container for up to 2 weeks.
